Quinoa - The healthy food
Quinoa in your diet
I was first introduced to Quinoa by my friend about few months ago. Ever since Quinoa has a special place in my plate. Though Quinoa looks like a cereal, it belongs to the family of beets and spinach and its scientific name is Chenopodium quinoa. To popularize Quinoa because of its nutrient values the Food and Agricultural Organization of the United Nations (FAO) has
officially declared that the year 2013 be recognized as "The International Year
of the Quinoa."
The way I enjoy Quinoa:
Boil quinoa in water along with brocclli, corn, tomatoes, chillies (One cup quinoa in six cups of water)
Add salt, pepper to taste.
Add virgin olive oil (optional)
Boil until quinoa is soft and the water is all soaked up.
Enjoy it hot or cold.
Another variation is to have it as a salad. Boil the quinoa and add tomatoes, boiled corn and onions on top of it.
Nutritional values: Quinoa is gluten free, a great source of fiber, with high protein quality and has adequate
source of all essential amino acids, including lysine and isoleucine. It
provides a variety of antioxidant phytonutrients, including ferulic, coumaric,
hydroxybenzoic, and vanillic acid. Is a rich source of vitamins such as vitamin E and riboflavin. Quinoa is a very good source of
antioxidant-promoting manganese. It is also a good source of heart-healthy
magnesium, folate, and fiber, as well as bone-building phosphorus and copper. The super food is known to have anitinflamatory properties. Studies on animals have shown Quinoa to lower the total cholesterol values.

Chilli Panini - Quick and lip smacking
Chilli Panini
Ingredients:
1. Wheat Flat Bread
5. Vegies - Beans, Tomatoes sliced, Onions sliced
6. Salt to taste
7. Garlic spread powder (From Costco) - optional
8. Olive oil
Steps:
1. Sort vegies in a skillet in olive oil, and garlic balsamic vinegar (2 tbl sp)
2. Add salt as taste, garlic spread powder and sort for about 8 min on medium so that the flavours get into the vegies
3. On half side of the flat bread spead Tzatziki sauce and add sorted vegies on top of it. Sprinkle chilli chutney thoroughly to make it spicy.
4. Grill for 6-8 min at high and remove from the grill
5. If desired cut the panini into half
Your panini is ready
Total cook time :16 min

Love for gardening
This summer my garden had been neglected as I had not been home most of the time. My sister had visited and I wanted to be hundred percent with her whom I was seeing after long. After she left it took me time to get into my routine schedules after a very long vacation. I got up fine morning and sipping my tea went straight in my garden to see so much care was needed. At a stretch I spend five hours in my garden weeding, watering and planting more plants that my frined had given. As I touched the plants and admired I thought why gadening was so close to me. Thoughts about this ran in my mind.
While gardeng I am so close to nature thinking only about the plants, seeing the smiling faces of the flowers and the growing buds. It is that time that gives me happiness of beautifying my home and growing something that has life. Reminds of my mom and dad back home who are are gardening lovers and makes me think how gardening was different to me as a kid. It is a pleasure to think how I can be creative in planting plants and share them with other gardener friends. Joys are stretched to see the gowth of shrubs, flowers, the fruits, colours of flowers and shapes of leaves. Everything is so peaceful around me and I can hear the birds sing and the bees buzz. It is the time when when my mind is undoubtly refreshed.

I survived -40
I dug the soil
As the snow melted
The ladybirds swifted
Shimmered and flapped
Wave of joy

After the snow melted. It was a joy to see the smiling faces of some of the perrenials showing their vigour and new buds emerging

Concentrating while working out !
I can talk about it from my experience
1. Don't get distracted by people around you even if they look at you(unless u are competing)
2. CLOSE YOUR EYES (if on power bike)- think of your goals, think of someone you love.
3. Have music if possible.
4. Don't read a magazine if you are serious in achieving your goals.
5. Don't worry if you sweat, let it drip.
6. Have water in between to keep your momentum going.
7. If you concentrate, you can also plan your day or do some written thoughts in your brain.

Tips while travelling to Europe
1. While planning to travel, check the dates are not coinciding with major national holidays of that country, especially on the day of arrival ,as you dont want to be disappointed to see everything closed.
2. Get the currency exchange rate before travelling, you will get lesser exchange rates when you reach there.
3. All European countries do not use Euro. If you have euros while traveling from one country to another, you can get the exchange at the airport or at the major railway stations.
4. Depending upon your budget you can do your booking on websites like booking.com, hotdeals.com, hotel.com.
5. While booking your hotels it is important to check the location, so that you can make your trip most enjoyable while enjoying the variety of things the place has to offer. For me it is the central location, unless I am going only for a beachside.
6. Some of the hotels offer you complimentary breakfast, take advantage of that offer. It will not help you taste the wide range of food they offer but also make your day more comfortable as you are all set to enjoy the city.
7. You go through immigration check only once at the point of entry into Europe.
8. Remember that at most places people won’t speak in English with few exceptions like Barcelona, Venice. Carry a translation book with you or use google translation. Learn major words used in that language that will come very handy while taking directions or ordering food
9. While shopping at bigger brand names, if you choose to use your credit card they will check your travel documents. So do not forget to carry them if you are shopping at high end shops.
10. While checking at majority of hotels or guest houses documents will be checked and photocopied for every member that is accompanying with you.
11. At majority of places toilets have flushing handles or plungers at the feet. So if see you don’t see the handles at the top check a push button right next to your feet.
12. Don’t be surprised if you see very narrow elevators at most hotels and you will have to squish yourself and your baggage.
13. Travel light, you may have to walk a long distance at an airport between flights or most restaurants are crowded so there may be trouble finding enough space for you to keep your stuff.
14. Switzerland the land of finances was most expensive. Buying two coffees and a muffin can rip u off Swiss Euro 30.
15. In Italy at smaller cafes, you will be charged differently depending upon you are having your coffee / deli at the counter or sitting at the table.
16. You can rent a car and use your international driving licence, but remember before you decide to do that driving is very different than that in North America.
17. If you have enough time, gain experience of travelling both by trains and buses from one city to another. Trains may take you through tunnels and elude you from the beautiful country sides.
18. Transit system is very good in Europe. If travelling by Eurostar, even second class is comfortable enough to offer you electrical points for your laptops, ipods and chargers and there is catering trolley that will pass for you to buy food.
19. If for any reason you miss your connecting train, go to the service counters where you will be helped to get on to the next train.
